Crazy Tiramisu


Warning: If you are opposed to seeing copious amounts of chocolate, eggs, cream, and alcohol, stop reading now.

For those of you who have been craving a four-thousand-calorie-a-serving snack, this is the recipe for you.


Ok, so it takes forever. Melting chocolate, making custard, whipping egg whites and cream and dirtying absolutely every single bowl you own.



And to add insult to injury, prepare to spend half your take-home salary on a single, solitary container of marscapone. But trust me on this one, it is oh, so worth it.


Because marscapone + coffee = heaven. 4 thousand gazillion calories worth of caffeinated heaven.

What were we making again? I could just eat the marscapone mixture straight out of the bowl and forget about the rest of it. But then again we do need to add some alcohol and carbs to round out this meal, so let's finish, shall we?


And for this we soak ladyfingers in alcohol. Silly country of mine and its silly grocery stores are a bit confused. Although to be honest, it is sort of a silly name for a cookie.


But that's not really important when such awesome dessert is in the house.

Tiramisu for Health Nuts
adapted from Emeril Lagasse. Makes approx 6-8 servings for anorexic models.

4 oz chocolate
3 large egg yolks
3 large egg whites
3 tablespoons sugar

1.5 cups brandy or sweet dessert wine

1 cup marscapone
1/4 cup brewed espresso

1 cup heavy whipping cream (32% milkfat)

cocoa powder

1. melt chocolate in a double boiler. remove and let cool
2. in a double boiler, beat egg yolks and 3T sugar. Add 1/2 cup of the wine and whip while it thickens, being careful not to let it boil. Remove from heat and add chocolate from step 1. let cool.

3. beat egg whites until stiff, and add mixture from step 2.

4. in a separate bowl, beat marscapone, coffee, and 2T sugar. 

5. Whip cream with 1 T sugar.

6. Dip ladyfingers in remaining brandy. Yum. 

7. Arrange as follows: ladyfingers (step 6), then half of the marscapone (step 4), then chocolate custard (step 3), then whipped cream (step 5). Repeat. 


Chill for at least 3 hours. Or, just  take a cookie when nobody is looking and go for it. To serve, dust with cocoa powder.
